Abstract: Chocolate: Food of the Gods and Lovers

Chocolate – Food of the Gods and Lovers”.  It includes a history of chocolate and the development of chocolate in the marketplace.   In 1500 BC-400 BC  The Olmec Indians of Mexico grew cocoa as a domestic crop.  Cocoa beans were traded for turquoise.  Montezuma II, Aztec emperor (1466–1520) drank 50 goblets a day.  We follow cocoa’s spread to Europe and go to the present distribution of cocoa in the world. I include the kinds of industrial milling and physical processes to concentrate the cocoa flavor principles as well as the chemistry involved.
